Pelt Color: A pale colour somewhere between yellow and orange.
Mane/Tail Color and Style: Her hair is streaked with chocolate brown, pale yellow and middle-ish orange, forelock sweeping just next to her ear. Coffea's mane and tail aren't perfectly styled, but they're not too unruly either; somewhere in the middle. The ends of her hair tend to curl up naturally.
Eye Color: A hazelnut brown.
Cutie Mark: A coffee flower.

Physique: Naturally small for her size, although Coffea can be quite nimble whilst flying due to the little weight she holds.

Rainy days (ponies track mud into her shop), being teased, animals, insects, sour/spicy food, reading/writing/anything educational, meeting new ponies.
Motivation:
Coffea's motivation is to earn a good living and a good life. She enjoys making food for her customers and seeing them eat her products. Being optimistic and a generally good cook, she's quite the money maker, and has high hopes for the future.
Strengths:
Cooking and baking, flying, earning money, being on the positive side and never looking at the negative, eaking up early. Coffea's also quite good at calming down her friends when they're nervous/frazzled about something, which ties in with her optimistic sight. Similarly, she's quite capable of carrying on conversations as she's really quite used to talking.
Weaknesses/Flaws:
Coffea is quite used to underestimating events, possibly because she never sees the negative, which leads to her being a little mortified. She holds grudges on those who have humiliated or done something dislikable to her - 'forgiving and forgetting' is quite hard for her. Due to the pegasi's positive nature, other ponies sometimes admonish her for not being 'serious enough. She also is quite bad at educational things and struggles at them.
Fears:
For some reason, Coffea is deathly scared of animals. Even a fly or two bothers her, and upon seeing larger species, she makes sure there's about 20 metres distance between her and the animal. The Everfree Forest also scares her, for everypony knows the things that hide in there.
Losing her work and profits is one of Coffea's other fears. She also hates heights and is deeply scared of water.
Overall Persona:
Coffea Arabica has been a pegasus resident of Ponyville for quite an admirably long time, due to the fact she moved in at a respectably small age. In the present, she lives on the upper floor of her tea shop whilst her parents moved to Trottingham. Despite the smallness of her residence, she enjoys looking after herself and being independent.
The pegasus is quite an honest young mare who aspires for the best, and only the best. That does lead to Coffea scorning a few other shops that clearly do not match up as well in prestige to hers, but she's respectable and polite towards the shop owners aside from the few hints about making the place better she puts in her speech.
Generally, Coffea's a pleasant pegasus. She helps out her friends a lot and gives them constructive advice and critique for their work. Her positive mood is quite catching, as are her random but rare bursts of negative-ness.
She adores her friends and Ponyville, and if one says a bad word about either of them, Coffea can get quite defensive. She'll try to force an apology from the offender, and if they do that she'll simply hold a grudge on them. But if they don't, Coffea usually gives them the silent treatment.
Friendship with both stallions and mares comes easily to Coffea, perhaps because of the long, engaging conversations she holds with her tea shop customers. The only hard part for her is making sure the friendship doesn't end abruptly, for she invests so much time in the shop that Coffea barely has any time to set aside for her friends.
Overall, Coffea's a simple pegasus pony with an eye for detail and food, who can be relied on.
